Sensory evaluation of banana peel chips and its devolepment potency as a major local food products at Lingga villages, Kubu Raya , West Kalimantan was studied. These subjected to sensory evaluation using 25 untrained panelist to asses hedonic parameters between bananas peel chip and control. The results showed that banana peel chips more overall acceptability than control. Subsequently, these product to SWOT analisyst to find out of affected factor to support or inhibition were to developed as a one of major local food products. The factor were developed as a major local food product concist of abundance of raw materials, habits of consumption and supporting program from village stakeholder.
